Crunchy Garlic Chicken

6 Servings

1/4 C. butter or margarine, melted
2 Tbs. milk
1 Tbs. chopped fresh chives or parsley
1/2 tsp. salt
1/2 tsp. garlic powder
2 C. whole grain total cereal,crushed(1 cup)
3 Tbs. chopped fresh parsley
1/2 tsp. paprika
6 boneless,skinless chicken breast



1.Heat oven to 425f. Spray 13x9 inch pan with cooking spray. In shallow dish, mix 2 Tablespoons of the butter, the milk, chives, salt and garlic powder.

2. In another shallow dish, mix crushed cereal,parsley and paprika. Dip chicken into milk mixture, then coat lightly and evenly with cereal mixture. Place in pan. Drizzle with remaining 2 Tablespoons butter.
3. Bake 20 to 25 minutes or until juice of chicken is clear when center of thickest part is cut.

Slow Cooker Mexican Beef Stew

2 lb. beef stew meat
1 can (28oz) progresso diced tomatoes, undrained
1 cup frozen small whole onions(from 1-lb bag)
1 tsp. chili powder
1 pkg. old el paso toco seasoning mix
1 can (15 oz)progresso black beans, drained, rinsed
1 can (11oz) Green Giant Mexicorn whole kernel corn with
red and green pepers, drained.

1. In 3 1/2 -4 quart slow cooker, mix beef, tomatoes, frozen onions and
chili powder.

2. Cover;cook on Low heat setting 9 to 11 hours.
3. Stir in taco seasoning mix, using wire whisk. Stir in beans and corn.
Increase heat setting to High. Cover; cook 15 to 30 minutes or until thickened.

Betty Crocker Kitchen Tip: Serve stew topped with shredded cheese
and chopped fresh cilantro for special touch.
